An Enrique Olvera recipe, Mezcal Poached Pear begins with ripe Mount Hood D’Anjou pears, slow-soaked in Koch mezcal. Once softened, the autumn fruit is blended with a splash of poaching liquid and a shot of cold mezcal for extra smoke. A final dusting of ancho chili contributes gentle heat, for a tangy-spicy-sweet bite.
